Quick Healthy Breakfast: Organic Spelt English Muffin with Almond Butter and Strawberries

Today I needed breakfast quick so I went with one of my favorite quick and healthy favorites: an Organic Spelt English Muffin with Almond Butter, Strawberries and a drizzle of Agave syrup.

I love these spelt english muffins by Rudi’s Organic Bakery because of their tart, almost sour dough taste. But most of all, I love this brand because they contain ingredients I can actually read, are a good source of protein, and contain less fat and sugar than other options. Basically, I get my toast without the guilt!

Next, I spread a little almond butter on top to sneak in some more protein. I prefer almond butter to peanut butter because of the added health benefits. Almond butter contains more heart-healthy monounsaturated fats, fiber,  calcium, vitamin e and other minerals than peanut butter and it tastes great too.

For the final touch, I add some beautiful locally grown organic strawberries packed with antioxidants, vitamins and fiber. Add a drizzle of agave syrup for a tint of all-natural sweetness.

This quick breakfast is the perfect start to my day. Nom Nom Nom
