As promised darlings, here is the recipe for the warm quinoa bowl I’ve been sharing on my Insta page and stories.

It only takes about 10 mins once the quinoa is cooked and I don’t have to spend $15 bucks per serving at a cool LA restaurant either!!  To be honest, I feel flattered that so many of you requested this recipe…it could be totally nasty for all you know!!! It isn’t but I’m just sayin’ it could be!  In fact this bowl is super addicting, super easy, and super satisfying. So thank goodness it’s only filled with good stuff… you can totally pig out as much as you want.  

Really quick let me just say I had to shift my vegetarian diet after the hysterectomy.  My digestion just isn’t the same. High fiber, easily digestible foods are pretty much what’s on the menu for all my meals.  No animal products. No fried foods…well that’s a lie…I cheat every now and then. No gluten or bread unless it’s in the form of a ramen or udon noodle…oh yeah and dumpling wrappers.  And little to no processed sugar. Basically eating is tricky and finding yummy fiber & protein rich dishes has been, lets just say, experimental

So on a whim I threw a few ingredients in a pan. I was aiming for a savory & tangy wanna be fried rice (minus the rice and all the bad stuff).  The result: Magically delicious!

Warm Quinoa Bowl Ingredients:

Servings: 1-2 depending on how starving you are

Warm Quinoa Bowl Ingredients

  • 2 cups Cooked Quinoa
  • 1 TBSP Avocado oil or EVO
  • 2 Big Handfuls of Fresh Spinach
  • 4-6 Mushrooms Sliced
  • 1 Leek Thinly Sliced
  • 3-4 Sprigs Roughly Chopped Cilantro
  • Salt & Pepper
  • 1 Lime Sliced into Wedges
  • Avocado
  • Chili Lime Seasoning (I get it from Trader Joe’s…you can totally do cayenne pepper too)

TO MAKE:Warm Protein Mushroom Quinoa Bowl with Wilted Spinach Recipe

  1. In a saute pan, add oil and warm on MED-HIGH heat. 
  2. Add sliced leeks & mushrooms and saute until mushrooms brown just a bit. Add cooked quinoa & chopped cilantro. Lower heat to MED-LOW
  3. Mix leeks & mushrooms with quinoa. Add salt & pepper to taste. Then let cook for about 3-5 minutes.
  4. Turn Heat OFF. Add spinach and gently mix with quinoa mixture until spinach just begins to wilt.

Serve immediately. 

I top my bowl with avocado, a small sprinkling of Trader Joe’s chili-lime seasoning and squeeze lots of lime juice allll over it!!
